For shallow keeper formats, I treat the keeper slots as redraft unless we're talking super elite talents
Neither of those players is a guaranteed top 48 player (assuming 12-team)

How do you value Benintendi in a 5x5 dynasty? Is he an elite player as he was touted as...or is he just a solid OF who contributes a little bit everywhere? Would you move him for a chance at someone like Eloy Jiminez who could be elite in power?

First, I would not trade him straight up for Eloy, although it's a good start
Benintendi is super well-rounded, and it does make sense to cash out before he stops running. I think you can hold him a year or two more before worrying
In the meantime, a lack of standout categories doesn't stop a player from being valuable.
