What's a good rule of thumb for (limited) production vs. consistent playing time?  and/or at what points do the daily starters lose value?  or is it more dependent on the fantasy scoring for each league....

Scoring definitely matters. For example, in ottoneu FGpts, I'll often prefer a middling leadoff hitter to a better platoon bat.
The key, usually, is to focus on hitting your GP limits then worry about marginal quality upgrades.
