With respect to Kessler Edwards, I don't think signing him to a non-guaranteed camp contract makes anyone else expendable.

That doesn't mean the Nuggets wouldn't think about trading Watson and/or Strawther, but Edwards' presence likely won't factor into that decision. I'm not even sure he makes the regular season roster.

Would Ben Simmons make sense in Denver?  They've been lacking in defense the past few years, and Simmons is long and plays good D

If I squint, I can sort of see it. There are some similarities with Westbrook, another ball-handler who could push the pace and set up teammates but wasn't much of a shooting threat. But Westbrook was lauded for his competitiveness, energy, tenacity, etc., which you're not getting at the same level from Simmons.
It's probably a long shot, even factoring in Simmons' solid defense.
