What did you eat at the meal at the Love that made it your favorite? I really enjoy it there, but it's never struck me as being truly great (like Vernick or Vetri), but more very good.

Vernick remains the worst high-end meal I've had in Philly. An abject disaster, with one dish coming out burned. It was a process failure.

We had a pasta dish and a chocolate mousse, neither of which is on the menu now.

I home make bagels with the baking soda bath too, you also want to get diastatic malt from a home brewing shop as well for the water bath, both for color and flavoring.

The top 100 takes about 4-5 weeks in total.

Well, I'm not in Vermont, so ... nothing? Also it's really cold up there. There isn't enough maple syrup in the world to overcome that.
