I don't understand the use of the opener. Why not pitch a starter twice through the order then go to the bullpen. What does getting the first three outs with a bullpen arm really add?

I'm struggling with WAR. I get that its a stat that is generally good at approximating but it seems like it's the answer now to certain questions.  where I struggle is defense, I can't understand for example how Cain is worth nearly 2x Arenado or 3x Baez.
