To what extent do players on an obviously-rebuilding team like the Reds get demoralized more easily? Deep down do they kinda think they could win or are they mostly going through the motions/trying to protect their individual performance?

They all kind of know what's going on, but they also know they need to perform because there are not very many jobs in the major leagues. They end up more often playing for themselves, but that's not exactly a big problem down the stretch in a lost season
