Has there every been a study on plyer defense against handedness. Is there a chance some fielders see the ball better off the bat of righties of lefties

There's probably a chance of that, but I have not seen any such studies. I'm not sure you could do that with play by play data, you'd have to use video. Because the data is just the results. If you're inferring that some fielders SEE the ball better, you'd probably need video to analyze their jumps/reactions to batted balls, etc.
You'd even need their reactions to say, foul balls, just to be sure.

No, the sample size on replays is way too small for that. You'd also have to filter for specific types of replays, or by situation, which would dilute the sample size even further.

I mean, let me clarify - I've never seen such a study. Someone might have done it, but I doubt you would find anything interesting from it.
