I don't know that him remaining in NYY is predetermined or anything; given his age (32 in 2021), I'd lean higher AAV on a shorter deal. Something like 3/60?

They tried on Bryce and even looked at young-ish free agents this winter (Castellanos). I think they'll definitely make an effort next winter, but they'll have to sell him on going to a club that hasn't won in a few years -- probably by sizably outbidding the runner-up offer.

tl;dr -- I think they'll try and come up short

Does a guy like Puig get signed immediately if theres a shortened season and they're playing double headers a bunch. At LEAST a league average bat and can provide relief in Double Headers for OF regulars.

I don't think the problem with Puig was a lack of interest -- it was a lack of interest at his asking price. If he's willing to just take a few million bucks to come back and play, I think he'd be on a roster quickly. Maybe teams would welcome the opportunity to sell some additional merch!
Braves in 2020

The Braves have over 50 million dollars coming off the books next year (Melancon, Ozuna, Hamels, Markakis). Who is their likeliest target?

They have a lot more than that coming off -- they're projected at a $156MM Opening Day mark now and only have $67MM committed in '21. That said, they have arb raises for Folty, Swanson, Camargo, Soroka, Fried and others.

Anyhow, I think they'll look at another short-term SP, a bat at 3B or in a corner OF spot. Anthopoulos doesn't seem inclined to give out long-term free agent deals, so I wouldn't get my hopes up on Betts, Springer, etc. though.

It'll depend to an extent on how much of a look they're able to get at Gore, Patino, etc. They've coveted high-end rotation help forever now. Starting pitching gets my vote, but if suddenly they have Gore, Paddack and Patino all looking like viable high-end starters, maybe they'll look for a more complete option at catcher, an impact bat at 2B, etc. Could see them push for a Lindor type again or even make a run at Semien depending on how the pitching progresses (with either Semien or Tatis sliding over to 2B).

Outside of the core players drafted and built while tanking, for Epstein’s reputation, he really hasn’t done much in development or hit on free agents/trades. Why is that never mentioned?

The fewer games we get in, the more I expect that'll be the case, yeah. Owners/front offices always prefer shorter-term deals, and owners will be more reluctant to spend lavishly after losing so much ticket/concession/tv revenue

White Sox, Braves, Giants, Rangers, Mets, Astros, Dodgers all make sense off the top of my head. Age/glove could outweigh the platoon concerns, but we generally haven't seen many corner OFs break the bank in recent years, with a  few notable exceptions. I have a hard time predicting more than three years right now, but that's a pretty off-the-cuff answer, so maybe a deeper look would change my mind.
