It seems like teams now move players around the diamond with impunity, particularly outfielders. I don’t feel like utility players have much value anymore since teams feel free to move players pretty much anywhere besides Catcher and Pitcher.

That might be true to some extent, but if you can play center field or shortstop, then there's definitely a lot of value in that. If teams feel like they can move players around more, that probably means players are just better than they used to be.
