You're probably being too cautious early. If your league is a 12-team mixed format, you have no need to fear rostering many $1 players. They will still be good or else easily replaced on the wire with guys who are good.
So go get those top guys early even when they're bad values.

We have debated our pitching stats. Is Wins still the way to go? Should Holds be included somehow? As their own stat or thrown in with saves?

I think Ws are the way to go, yes.
I prefer to use just saves and make everyone deal with the pain of inconsistent usage

Don't separate them. Nobody wants to roster 8 RP in fantasy trying to chase 2 categories.

I like to put up the top prospects early. JRod, Witt, Tork, Greene, etc.
My leaguemates know that too and sometimes let me have them for cheap.
But usually you'll see things get out of control for at least a couple of them

The wild card right now is Max Muncy - he's very affordable but the recent positive-ish news is changing that.
There aren't many other good options after Polanco/India range

if  you're in an NL/AL only what would your plan be for the big names that haven't signed yet? avoid at all costs? take a late flyer if you think you know where they're going? talk your league into taking the top 10-15 FAs off the the the table and auction them off after they're all signed?

Depending on your platform, you might be able to grandfather them in. Pretty sure I've seen some FanTrax leagues doing that.
So your league will play a little deeper than normal

My corner option for keepers is Tellez or Beer?  Worried Mil makes a pickup that negates Tellez’s AB but Beer doesn’t get much opportunity in AZ? Both are at a dollar. Thoughts?
